Choose whatever version of Linux you want at Distrowatch.com. It's a great site that has ratings based on the number of people who view the distro page on thier site.
For General Ubuntu Help, go to Ubuntuforums.org. A GREAT resource for Ubuntu help; you can also try the #Ubuntu channel on IRC.
An awesome program to to get all the normal stuff you want for Ubuntu - Automatix. They have lots of new features and are really good at it now.

Your link to all things open source is definately SourceForge. It has programs that are open source, made for any and all Operating Systems.
And if you just want it pre-installed with Linux, System 76 is probably your best bet. I would have gone this route, but they wanted more money for the same system and I actually wanted windows for some of my stuff (like Dreamweaver.)

Open Source Office Software - OpenOffice.org. My favorite office suite really, I even use it in Windows.
Another great Linux site is DesktopLinuxatHome.com. It has some great articles and answers.
